PART 4: A5 COURSE

“Wa’ means Japanese and “gyu” means cattle. The flavors of Japanese Wagyu are very hig in marble resulting in a rich flavor unmatched by any other cattle in the world. This wagyu is rated A-5, the highest grading that wagyu can achieve. In order to receive an A-5 grading the beef must meet certain specifications, significantly, a Beef Marbling Score (BMS) of 8 or higher (BMS is scored 1-12). Wagyu is high in a type of fatty acid called conjugated linoleic acid (CLA). Wagyu beef contain the highest amount of CLA per gram of any foodstuff – about 30% more than other beef breeds – due to higher linoleic acid levels. Foods that are naturally high in CLA have fewer negative health effects.
