House-made Yuzu Juice
Yuzu is a fruit originated in Asia and is a cross between a mandarin orange and ichang pipeda.

A5 NEW YORK STRIP with ponzu jelly and arima sancho pepper
Given the highest rating in the Japanese grading scale, this cut of Wagyu arrives by way of Miyazaki, Japan; which is known for their pristine quality and winner of numerous awards.

Arima sancho pepper is derived from a rare wild tree that has recently been rediscovered on the Mount Rokkō range near Kobe, Japan.

USDA PRIME RIB-EYE TATAKI smoked with cherrywood chips
Within the whole rib-eye subprimal, there is an elongated piece of the rib-eye used to make the tataki. Out of the roughly 15lbs of the whole rib-eye, only 10oz is used for the tataki representing 4.16% of the entire rib-eye.
